If you've never read the "Little House" series, you should. My family and I have grown to love the Ingalls family, and learned much about being self sufficient from the story of their lives. The kids and I have been reading the long winter, and "Ma" is always cooking bean soup, so I was inspired to make some. It simmered on the stove all morning and we had it for lunch. If you don't eat beans they do not sound very good (at least I used to think so), but they can actually be delicious.
Bean Soup
6 cups cooked black beans
1 chopped onion
1 beef bullion cube
2 stripes of bacon or real bacon bits
garlic
oil
Brown onion, garlic and bacon in two tablespoons of oil. Then drain and rinse beans if canned. Place beans, bullion cube in pot with onion garlic and bacon. Add water till it just covers the beans and let simmer. Or throw them in the crock pot for a few hours. Enjoy!
